Teriyaki Turkey Meatballs With Rice

These teriyaki turkey meatballs with rice are practical for meal prep and easy enough for a weeknight. Serves 4.
Ingredients:
- 1 pound ground turkey
- 1/3 cup breadcrumbs
- 1 egg
- 2 scallions, thinly sliced
- 2 cloves garlic, minced
- 1 teaspoon grated fresh ginger
- 1/2 teaspoon kosher salt
- 1 tablespoon oil
- 1/4 cup low-sodium soy sauce
- 2 tablespoons honey
- 1 tablespoon rice vinegar
- 1 teaspoon cornstarch
- 1 cup cooked jasmine rice per 2 servings, for serving
- Steamed broccoli or snap peas, for serving
Instructions:
- In a bowl, combine the turkey, breadcrumbs, egg, half the scallions, garlic, ginger, and salt. Form into 16 small meatballs.
- Heat the oil in a large skillet over medium heat. Cook the meatballs 10 to 12 minutes, turning occasionally, until browned and cooked through.
- In a small bowl, whisk together the soy sauce, honey, rice vinegar, cornstarch, and 2 tablespoons water.
- Pour the sauce into the skillet and cook 1 to 2 minutes, turning the meatballs until glazed.
- Serve over rice with broccoli or snap peas, topped with the remaining scallions.

The quick skillet glaze gives the meatballs enough flavor to feel finished without requiring a separate long marinade.
