A hearty vegetarian chili with pantry staples and deep flavor from chipotle. Serves 6.

Ingredients
- 2 tbsp olive oil
- 1 large onion, diced
- 3 cloves garlic, minced
- 2 medium sweet potatoes, 1/2-inch cubes
- 2 cans (15 oz) black beans, drained and rinsed
- 1 can (14.5 oz) diced tomatoes
- 3 cups vegetable broth
- 1 tbsp tomato paste
- 2 tsp ground cumin
- 2 tsp smoked paprika
- 1–2 tsp adobo sauce from chipotles (to taste)
- 1 tsp oregano
- 1 1/4 tsp kosher salt
- 1/2 tsp black pepper
- Juice of 1 lime
- Optional toppings: avocado, cilantro, sour cream

Steps
1) In a pot, heat oil over medium. Sauté onion 4 minutes; add garlic 30 seconds.
2) Add sweet potatoes, cumin, smoked paprika, oregano, and tomato paste; cook 2 minutes.
3) Stir in beans, tomatoes, broth, adobo, salt, and pepper. Simmer uncovered 25–30 minutes until potatoes are tender and chili thickens.
4) Finish with lime juice and adjust salt. Serve with desired toppings.
