Skillet Chicken Parmesan Meatballs With Marinara and Mozzarella

These chicken Parmesan meatballs are hearty, family-friendly, and simple enough for a one-pan dinner with bread or pasta. Serves 4 to 5.
Ingredients:
- 1 pound ground chicken
- 1/2 cup Italian-style breadcrumbs
- 1/4 cup grated Parmesan
- 1 large egg
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 3/4 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 1 jar marinara sauce, 24 ounces
- 1 cup shredded mozzarella
- 2 tablespoons chopped basil or parsley
Instructions:
- In a bowl, combine the chicken, breadcrumbs, Parmesan, egg, garlic, oregano, salt, and pepper. Mix gently and form 16 meatballs.
- Heat the olive oil in a large oven-safe skillet over medium heat. Brown the meatballs for 5 to 6 minutes, turning carefully.
- Pour in the marinara and spoon some sauce over the meatballs. Cover and simmer 8 minutes.
- Sprinkle the mozzarella over the skillet.
- Broil for 2 to 3 minutes until the cheese melts and bubbles.
- Finish with basil or parsley and serve hot.
Why it works:
Ground chicken stays tender when mixed gently and finished in sauce.

Prep 15 minutes, cook 20 minutes, total about 35 minutes.
