Skillet Chicken Parmesan Meatballs With Marinara and Mozzarella

These chicken Parmesan meatballs are hearty, family-friendly, and simple enough for a one-pan dinner with bread or pasta. Serves 4 to 5.

Ingredients:

  • 1 pound ground chicken
  • 1/2 cup Italian-style breadcrumbs
  • 1/4 cup grated Parmesan
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 3/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 jar marinara sauce, 24 ounces
  • 1 cup shredded mozzarella
  • 2 tablespoons chopped basil or parsley

Instructions:

  1. In a bowl, combine the chicken, breadcrumbs, Parmesan, egg, garlic, oregano, salt, and pepper. Mix gently and form 16 meatballs.
  2. Heat the olive oil in a large oven-safe skillet over medium heat. Brown the meatballs for 5 to 6 minutes, turning carefully.
  3. Pour in the marinara and spoon some sauce over the meatballs. Cover and simmer 8 minutes.
  4. Sprinkle the mozzarella over the skillet.
  5. Broil for 2 to 3 minutes until the cheese melts and bubbles.
  6. Finish with basil or parsley and serve hot.
