Cooking: Sheet-Pan Za'atar Halloumi and Vegetables with Tahini Drizzle (Complete Recipe)

A fast, vegetarian sheet-pan meal with salty halloumi and spiced vegetables. Serves 4.

Ingredients
- 12 oz halloumi, 1/2-inch slices
- 1 lb baby potatoes, halved
- 2 bell peppers, strips
- 1 red onion, wedges
- 3 tbsp olive oil
- 1 1/2 tbsp za'atar
- 3/4 tsp kosher salt
- 1/2 tsp black pepper
- 2 tbsp tahini
- 1 tbsp lemon juice
- 1 tbsp warm water (plus more as needed)
- 1 clove garlic, minced
- Fresh parsley for garnish

Steps
1) Heat oven to 425°F (220°C). Toss potatoes, peppers, and onion with 2 tbsp oil, 1 tbsp za'atar, 1/2 tsp salt, and pepper. Roast 20 minutes.
2) Add halloumi to the pan, drizzle remaining 1 tbsp oil, and sprinkle remaining 1/2 tbsp za'atar and 1/4 tsp salt. Roast 10–12 minutes more until cheese is golden and potatoes are tender.
3) Whisk tahini, lemon juice, garlic, and warm water until smooth; thin if needed.
4) Drizzle tahini over pan, garnish with parsley, and serve warm.
