This sheet pan dinner is fast, colorful, and very low effort. Serves 4.

Ingredients:

  • 1 package shelf-stable potato gnocchi, 16 ounces
  • 12 ounces fully cooked chicken sausage, sliced
  • 3 bell peppers, sliced
  • 1 small red onion, sliced
  • 3 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 2 tablespoons grated Parmesan
  • 2 tablespoons chopped basil or parsley

Instructions:

  1. Heat the oven to 425°F and line a sheet pan with parchment.
  2. On the pan, toss the gnocchi, sausage, peppers, onion, olive oil, salt, pepper, garlic powder, and oregano.
  3. Spread everything into an even layer.
  4. Roast 25 to 30 minutes, stirring once halfway through, until the gnocchi is crisped and the vegetables are browned at the edges.
  5. Sprinkle with Parmesan and basil or parsley before serving.
