This sheet pan dinner is fast, colorful, and very low effort. Serves 4.
Ingredients:
- 1 package shelf-stable potato gnocchi, 16 ounces
- 12 ounces fully cooked chicken sausage, sliced
- 3 bell peppers, sliced
- 1 small red onion, sliced
- 3 tablespoons olive oil
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 2 tablespoons grated Parmesan
- 2 tablespoons chopped basil or parsley
Instructions:
- Heat the oven to 425°F and line a sheet pan with parchment.
- On the pan, toss the gnocchi, sausage, peppers, onion, olive oil, salt, pepper, garlic powder, and oregano.
- Spread everything into an even layer.
- Roast 25 to 30 minutes, stirring once halfway through, until the gnocchi is crisped and the vegetables are browned at the edges.
- Sprinkle with Parmesan and basil or parsley before serving.
