Roasted Cauliflower White Bean Tacos

These roasted cauliflower white bean tacos are hearty enough for dinner but straightforward enough for a weeknight. The beans add substance, and a quick lime crema keeps everything from tasting dry. Serves 4.
Ingredients:
- 1 medium head cauliflower, cut into small florets
- 2 tablespoons olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 3/4 teaspoon kosher salt, divided
- 1 can white beans, drained and rinsed
- 8 small corn or flour tortillas
- 1/3 cup sour cream or plain Greek yogurt
- 1 tablespoon lime juice
- 1 cup shredded cabbage
- 1 avocado, sliced
- 2 tablespoons chopped cilantro
Instructions:
- Heat oven to 425°F. Toss the cauliflower with olive oil, chili powder, cumin, and 1/2 teaspoon salt. Spread on a sheet pan.
- Roast for 20 to 25 minutes, stirring once, until tender and browned at the edges.
- Warm the beans in a small saucepan with a splash of water and the remaining 1/4 teaspoon salt.
- Stir together the sour cream and lime juice.
- Warm the tortillas, then fill each with beans, roasted cauliflower, cabbage, avocado, and lime crema.
- Finish with cilantro and serve.
Why it works:
Roasting concentrates the cauliflower's flavor and gives the tacos more texture than a quick stovetop version.

Prep 15 minutes, cook 25 minutes, total about 40 minutes.
