Peanut butter banana baked oatmeal is an easy make-ahead breakfast that slices neatly and reheats well. It tastes comforting but not overly sweet, making it useful for busy mornings or afternoon snacks. Serves 6.
Ingredients:
- 2 ripe bananas, mashed
- 2 cups old-fashioned oats
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/4 teaspoon fine salt
- 1 3/4 cups milk
- 2 eggs
- 1/3 cup peanut butter
- 1/4 cup maple syrup or honey
- 1 teaspoon vanilla extract
- 1/4 cup chopped walnuts or chocolate chips, optional
Instructions:
- Heat oven to 375°F. Grease an 8-inch square baking dish.
- In a large bowl, stir together oats, baking powder, cinnamon, and salt.
- In another bowl, whisk the mashed bananas, milk, eggs, peanut butter, maple syrup, and vanilla until smooth.
- Pour the wet mixture into the oats and stir well. Fold in walnuts or chocolate chips if using.
- Spread in the baking dish and bake 35 to 40 minutes until set and lightly golden.
- Cool 10 minutes before slicing and serving.
