Fast, rich salmon under the broiler plus fragrant rice. Serves 4.
Ingredients
- 4 salmon fillets (5โ6 oz each)
- 2 tbsp softened butter
- 1 tbsp white miso paste
- 2 tsp honey
- 1 tsp soy sauce
- 1 tsp rice vinegar
- 3 cups cooked warm rice
- 1 tbsp toasted sesame oil
- 1 tbsp toasted sesame seeds
- 2 scallions, thinly sliced
- Salt and pepper
Steps
1) Position rack 6 inches from broiler; line a sheet pan with foil.
2) Mix butter, miso, honey, soy, and vinegar. Pat salmon dry, season lightly with salt/pepper, and spread miso butter on top.
3) Broil 7โ9 minutes until salmon flakes and top is caramelized.
4) Toss warm rice with sesame oil and seeds. Plate rice, top with salmon, and finish with scallions.
