This maple Dijon pork tenderloin with roasted carrots is a solid choice when you want a dinner that feels polished but stays approachable. The glaze is sweet, sharp, and savory, and the carrots roast alongside for an easy side. Serves 4.

Ingredients:

  • 1 pork tenderloin, about 1 to 1 1/4 pounds
  • 1 pound carrots, peeled and cut into sticks
  • 2 tablespoons olive oil, divided
  • 1 teaspoon kosher salt, divided
  • 1/2 teaspoon black pepper
  • 2 tablespoons Dijon mustard
  • 1 tablespoon maple syrup
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried thyme

Instructions:

  1. Heat oven to 425°F. Line a sheet pan with parchment.
  2. Toss the carrots with 1 tablespoon olive oil, 1/2 teaspoon salt, and a little pepper. Spread on the pan and roast 10 minutes.
  3. Pat the pork dry. Stir together the remaining olive oil, remaining salt, pepper, Dijon, maple syrup, garlic, and thyme. Rub over the pork.

  5. Roast 20 to 24 minutes, until the pork reaches 145°F in the thickest part.
