Lemon-Herb Baked Cod with Crispy Potatoes and Green Beans

Ingredients
- 1.5 lb cod fillets
- 1.25 lb baby potatoes, halved
- 12 oz green beans, trimmed
- 3 tbsp olive oil
- Zest + juice of 1 lemon
- 2 cloves garlic, minced
- 1 tsp Dijon mustard
- 1 tsp smoked paprika
- 1.25 tsp kosher salt, 1/2 tsp pepper
- 2 tbsp parsley or dill
Instructions
1) Heat oven to 425°F. Toss potatoes with 1.5 tbsp oil and 1/2 tsp salt/pepper; roast 15 minutes.
2) Whisk remaining oil with lemon zest/juice, garlic, Dijon, paprika, remaining salt/pepper.
3) Toss green beans with 1 tbsp dressing; add to pan around potatoes. Roast 8 minutes.
4) Pat cod dry; brush with remaining dressing. Place on pan; roast 8–10 minutes until flakes at 135–140°F.
5) Finish with herbs and extra lemon.
Why it works: staggered roasting keeps potatoes crisp, beans tender, and fish moist with bright citrus dressing.
