2026-05-10
These rice bowls are quick, savory, and balanced with a cool crunchy side. Serves 4.
Ingredients:
- 1 pound ground beef
- 1 tablespoon neutral oil
- 2 teaspoons grated fresh ginger
- 2 cloves garlic, minced
- 3 tablespoons low-sodium soy sauce
- 1 tablespoon honey
- 1 teaspoon rice vinegar
- 1/2 teaspoon black pepper
- 4 cups cooked rice
- 1 large cucumber, thinly sliced
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1/4 teaspoon salt
- 2 green onions, sliced
- 1 tablespoon sesame seeds, optional
Instructions:
- Toss the cucumber with 1 tablespoon rice vinegar, sesame oil, and salt. Set aside.
- Heat the neutral oil in a skillet over medium-high heat. Add the beef and cook, breaking it up, until browned.
- Stir in the ginger and garlic for 30 seconds.
- Add the soy sauce, honey, remaining 1 teaspoon rice vinegar, and black pepper. Cook 2 minutes until glossy.
- Divide the rice into bowls and top with the beef mixture.
- Add the cucumber salad, then finish with green onions and sesame seeds.
Why it works:
The quick cucumber salad cuts through the richness of the beef and keeps the meal from feeling too heavy.
Timing:
Prep 10 minutes, cook 15 minutes, total about 25 minutes.
