These honey garlic salmon rice bowls are a strong weeknight option when you want something balanced that still feels a little special. The sauce is simple, the salmon cooks quickly, and the rice makes the meal satisfying. Serves 4.
Ingredients:
- 1 1/4 pounds salmon fillet, cut into 4 pieces
- 2 cups cooked rice
- 1 tablespoon olive oil
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 2 cloves garlic, minced
- 1 teaspoon rice vinegar
- 1 cucumber, sliced thin
- 1 avocado, sliced
- 2 green onions, sliced
- Sesame seeds, optional
Instructions:
- Heat oven to 425°F. Place the salmon on a lined sheet pan and rub with olive oil, salt, and pepper.
- Stir together the soy sauce, honey, garlic, and rice vinegar. Spoon over the salmon.
- Bake 10 to 12 minutes until the salmon flakes easily.
- Divide the rice among bowls. Top with salmon, cucumber, and avocado.
- Spoon any pan juices over the bowls and finish with green onions and sesame seeds if using.
