2026-05-08

These beef and broccoli noodles are savory, quick, and weeknight-friendly without tasting flat. Serves 4.

Ingredients:

  • 8 ounces spaghetti or lo mein noodles
  • 1 tablespoon neutral oil
  • 1 pound flank steak, thinly sliced against the grain
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 3 cups broccoli florets
  • 3 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 2 teaspoons cornstarch
  • 1/2 cup water
  • 2 green onions, sliced

Instructions:

  1. Cook the noodles according to package directions. Drain and set aside.
  2. Heat the oil in a large skillet over medium-high heat. Season the steak with the salt and pepper.
  3. Cook the steak in a single layer for 2 to 3 minutes per side until browned, then transfer to a plate.
  4. Add the broccoli with 2 tablespoons water and cover for 2 minutes to steam lightly.
  5. Stir in the garlic and ginger and cook 30 seconds.
  6. In a small bowl, whisk together the soy sauce, brown sugar, rice vinegar, sesame oil, cornstarch, and 1/2 cup water.
  7. Return the steak to the skillet, add the noodles and sauce, and toss 1 to 2 minutes until glossy. Top with green onions and serve.

Why it works:

A short sauce and quick steam keep the broccoli bright while still coating the noodles well.

Timing:

Prep 15 minutes, cook 15 minutes, total about 30 minutes.
