These beef and broccoli noodles are savory, quick, and weeknight-friendly without tasting flat. Serves 4.
Ingredients:
- 8 ounces spaghetti or lo mein noodles
- 1 tablespoon neutral oil
- 1 pound flank steak, thinly sliced against the grain
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 3 cups broccoli florets
- 3 cloves garlic, minced
- 1 tablespoon grated fresh ginger
- 1/4 cup low-sodium soy sauce
- 2 tablespoons brown sugar
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 2 teaspoons cornstarch
- 1/2 cup water
- 2 green onions, sliced
Instructions:
- Cook the noodles according to package directions. Drain and set aside.
- Heat the oil in a large skillet over medium-high heat. Season the steak with the salt and pepper.
- Cook the steak in a single layer for 2 to 3 minutes per side until browned, then transfer to a plate.
- Add the broccoli with 2 tablespoons water and cover for 2 minutes to steam lightly.
- Stir in the garlic and ginger and cook 30 seconds.
- In a small bowl, whisk together the soy sauce, brown sugar, rice vinegar, sesame oil, cornstarch, and 1/2 cup water.
- Return the steak to the skillet, add the noodles and sauce, and toss 1 to 2 minutes until glossy. Top with green onions and serve.
Why it works:
A short sauce and quick steam keep the broccoli bright while still coating the noodles well.
Timing:
Prep 15 minutes, cook 15 minutes, total about 30 minutes.
