Cinnamon Banana Baked Oatmeal

This cinnamon banana baked oatmeal is an easy make-ahead breakfast that slices cleanly and reheats well. Serves 6.

Ingredients:

  • 2 ripe bananas, mashed
  • 2 cups old-fashioned oats
  • 1 1/2 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • 1/4 teaspoon kosher salt
  • 1 3/4 cups milk
  • 2 eggs
  • 1/4 cup maple syrup
  • 2 tablespoons melted butter or coconut oil
  • 1 teaspoon vanilla extract
  • 1/3 cup chopped walnuts or pecans, optional

Instructions:

  1. Heat oven to 375°F. Grease an 8-inch square baking dish.
  2. In a large bowl, stir together the oats, cinnamon, baking powder, and salt.
  3. In a separate bowl, whisk the bananas, milk, eggs, maple syrup, melted butter, and vanilla.
  4. Pour the wet ingredients into the dry ingredients and stir well. Fold in the nuts if using.
  5. Transfer to the baking dish and bake 30 to 35 minutes, until set and lightly golden on top.
  6. Cool for 10 minutes before slicing and serving.
