Cinnamon Banana Baked Oatmeal

This cinnamon banana baked oatmeal is an easy make-ahead breakfast that slices cleanly and reheats well. Serves 6.
Ingredients:
- 2 ripe bananas, mashed
- 2 cups old-fashioned oats
- 1 1/2 teaspoons ground cinnamon
- 1 teaspoon baking powder
- 1/4 teaspoon kosher salt
- 1 3/4 cups milk
- 2 eggs
- 1/4 cup maple syrup
- 2 tablespoons melted butter or coconut oil
- 1 teaspoon vanilla extract
- 1/3 cup chopped walnuts or pecans, optional
Instructions:
- Heat oven to 375°F. Grease an 8-inch square baking dish.
- In a large bowl, stir together the oats, cinnamon, baking powder, and salt.
- In a separate bowl, whisk the bananas, milk, eggs, maple syrup, melted butter, and vanilla.
- Pour the wet ingredients into the dry ingredients and stir well. Fold in the nuts if using.
- Transfer to the baking dish and bake 30 to 35 minutes, until set and lightly golden on top.
- Cool for 10 minutes before slicing and serving.
