Banana Walnut Baked Oatmeal

This banana walnut baked oatmeal is useful for breakfast meal prep and easy enough for a relaxed weekend bake. It slices cleanly after cooling a bit and reheats well through the week. Serves 6.

Ingredients:

  • 2 ripe bananas, mashed
  • 2 cups old-fashioned oats
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon kosher salt
  • 2 eggs
  • 1 3/4 cups milk
  • 1/4 cup maple syrup
  • 2 tablespoons melted butter or coconut oil
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts

Instructions:

  1. Heat oven to 375°F and grease an 8-inch square baking dish.
  2. In a large bowl, stir together the oats, baking powder, cinnamon, salt, and walnuts.
  3. In another bowl, whisk the bananas, eggs, milk, maple syrup, melted butter, and vanilla.
  4. Pour the wet mixture into the dry ingredients and stir well.
  5. Spread into the baking dish and bake 35 to 40 minutes, until set and lightly golden.
  6. Cool for 10 minutes before slicing and serving.
